Ingredients:
4 boneless, skinless chicken breasts
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1 tablespoon oil (for searing)
1 cup heavy cream
½ cup chicken broth
½ cup grated Parmesan cheese
1 teaspoon Italian seasoning
½ teaspoon crushed red pepper flakes (optional)
1 teaspoon minced garlic
½ cup chopped sun-dried tomatoes (oil-packed, drained)
1½ cups baby spinach
Directions:
Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
Heat oil in a skillet over medium-high heat and sear chicken for 2–3 minutes on each side until lightly golden. (Optional but adds flavor.)
Place the chicken in the slow cooker.
In a bowl, whisk together heavy cream, chicken broth, Parmesan, Italian seasoning, crushed red pepper flakes, and garlic.
Pour the mixture over the chicken.
Add the sun-dried tomatoes.
Cover and cook on LOW for 4–6 hours or on HIGH for 2½–3½ hours, until the chicken is tender.
In the last 30 minutes of cooking, stir in the spinach and let it wilt.
