Radish and Cucumber Salad
Radish and Cucumber Salad
Radish and Cucumber Salad is a refreshing, crisp, and tangy dish that’s perfect for hot summer days or as a light side to any meal. The peppery bite of radishes pairs beautifully with the cool crunch of cucumbers, while a simple vinaigrette adds just the right amount of tang. This salad is quick to prepare, healthy, and can be customized with your favorite herbs for an extra flavor boost.
Ingredients:
1 cup radishes, thinly sliced
1 large cucumber, sliced
1/4 small red onion, thinly sliced
2 tablespoons olive oil
1 tablespoon white wine vinegar (or apple cider vinegar)
1 teaspoon honey or sugar
Salt and pepper, to taste
1 tablespoon fresh dill or parsley, chopped (optional for garnish)
Directions:
Prepare the Vegetables:
Slice the radishes and cucumber thinly, using a mandoline slicer or a sharp knife. Slice the red onion thinly as well.
Make the Dressing:
In a small bowl, whisk together olive oil, vinegar, honey (or sugar), salt, and pepper. Adjust the seasoning as needed.
Assemble the Salad:
In a large mixing bowl, combine the sliced radishes, cucumber, and red onion. Pour the dressing over the vegetables and toss gently to combine.
Chill and Serve:
Let the salad sit in the refrigerator for about 15-20 minutes to allow the flavors to meld. Garnish with fresh dill or parsley if desired, and serve chilled.
