2 pounds potatoes, cut into 1½-inch chunks
2 tablespoons olive oil
1 teaspoon kosher salt
¾ teaspoon ground black pepper
½ teaspoon paprika
2 pounds skinless, boneless chicken breasts, diced into 1½-inch pieces
1 cup creamy Parmesan garlic sauce (e.g., Buffalo Wild Wings Parmesan Garlic Sauce)
½ cup water or chicken stock
2 cups shredded mozzarella cheese
¼ cup grated Parmesan cheese (optional)
1 tablespoon chopped fresh parsley (optional)
In the bottom of a slow cooker, combine the potatoes, olive oil, salt, black pepper, and paprika. Stir until the potatoes are well-coated.
Place the diced chicken pieces on top of the seasoned potatoes. Sprinkle with the remaining salt and pepper.
In a separate bowl, whisk together the Parmesan garlic sauce and water (or chicken stock). Pour this mixture evenly over the chicken and potatoes in the slow cooker.
Cover and cook on High for 4 hours or on Low for 6 hours, until the chicken is cooked through and the potatoes are tender.
During the last 20 minutes of cooking, sprinkle the shredded mozzarella and grated Parmesan cheeses over the top. Cover and continue cooking until the cheese is melted and bubbly.
If desired, sprinkle with chopped fresh parsley before serving.
