Ingredients:
2 cups fresh corn kernels (from about 2-3 ears of corn, or use frozen corn)
1 large cucumber, diced
1/4 cup fresh basil, chopped
2 tablespoons fresh chives, chopped
1 tablespoon olive oil
1 tablespoon white wine vinegar (or apple cider vinegar)
1 teaspoon honey or sugar (optional)
Salt and pepper, to taste
1 tablespoon lemon juice (optional, for extra tang)
Directions:
Prepare the Corn and Vegetables:
If using fresh corn, cook the corn by boiling it or grilling it, then slice off the kernels. If using frozen corn, simply thaw and drain it. Dice the cucumber into small chunks and chop the fresh basil and chives.
Make the Dressing:
In a small bowl, whisk together the olive oil, vinegar, honey (if using), salt, pepper, and lemon juice (if using).
Assemble the Salad:
In a large bowl, combine the corn, cucumber, basil, and chives. Pour the dressing over the top and toss gently to combine.
Chill and Serve:
Let the salad sit in the refrigerator for 15-20 minutes to allow the flavors to meld. Serve chilled, and enjoy!
