Ingredients:
1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
8 slices thick-cut bacon, cut in half
½ cup pure maple syrup
2 tablespoons brown sugar
1 tablespoon Dijon mustard
1 teaspoon lime juice
Salt and freshly ground black pepper, to taste
Toothpicks, for securing
Directions:
Preheat your oven to 400°F (200°C).
Season the chicken pieces with salt and pepper.
Wrap each piece of chicken with a half slice of bacon and secure with a toothpick.
Place the bacon-wrapped chicken bites on a baking sheet lined with parchment paper.
Bake for 20-25 minutes, or until the bacon is crispy and the chicken is cooked through.
While the chicken is baking, prepare the glaze by combining maple syrup, brown sugar, Dijon mustard, and lime juice in a small saucepan over medium heat.
