2 pints cherry or grape tomatoes
8 ounces block feta cheese
1/4 cup extra virgin olive oil
3 garlic cloves, minced
1/4 teaspoon sea salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes (optional)
10 ounces pasta (like penne or rotini)
1/4 cup chopped fresh basil
Preheat the oven to 400°F (200°C).
Place the cherry tomatoes in a baking dish. Add garlic, salt, pepper, and red pepper flakes. Drizzle with olive oil and toss to combine.
Place the block of feta in the center of the tomatoes. Drizzle a little olive oil over the feta.
Bake uncovered for 35 minutes, or until the tomatoes burst and the feta is soft and golden.
Meanwhile, cook the pasta according to package directions. Reserve 1/2 cup of pasta water and then drain the pasta.
