Ingredients:
8 ounces fresh or dried Shanghai-style wheat noodles (or thick egg noodles)
8 ounces pork shoulder or pork loin, thinly sliced
2 tablespoons vegetable oil
3 cloves garlic, minced
1 cup bok choy, chopped
1/2 cup carrots, julienned
3 green onions, sliced
3 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon sesame oil
1/2 teaspoon sugar
Salt and pepper, to taste
Directions:
Cook noodles according to package instructions until al dente. Drain and set aside.
Heat vegetable oil in a large wok or skillet over medium-high heat. Add garlic and sauté until fragrant.
Add sliced pork and cook until browned and cooked through.
Add bok choy, carrots, and green onions; stir-fry for 2-3 minutes until vegetables are tender-crisp.
Add cooked noodles to the wok and toss to combine.
Stir in soy sauce, oyster sauce, sesame oil, sugar, salt, and pepper. Cook for another 2-3 minutes until noodles are coated and heated through.
Serve hot, garnished with extra green onions if desired.
