Ingredients:
For the Cookie Dough:
1 cup unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
For the Cheesecake Swirl:
8 ounces cream cheese, softened
1/3 cup granulated sugar
1 teaspoon vanilla extract
For the Blueberry Swirl:
1/2 cup blueberry jam or preserves
Directions:
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together butter and sugar until light and fluffy. Add egg and vanilla extract, mixing well.
In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture, mixing until just combined.
In another bowl, beat cream cheese, sugar, and vanilla extract until smooth to create the cheesecake swirl.
On the prepared baking sheet, drop tablespoons of cookie dough, cheesecake mixture, and blueberry jam close together. Use a toothpick or knife to gently swirl the mixtures together for a marbled effect.
Bake for 12-15 minutes, or until edges are lightly golden.
Remove from oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
