Sausage, Egg, and Cheese Roll-Ups are a delicious and portable breakfast option perfect for busy mornings or brunch gatherings. These roll-ups combine savory sausage, fluffy eggs, and melted cheese wrapped in a soft tortilla or crescent dough, creating a satisfying and flavorful handheld meal. Easy to make ahead or fresh, they are ideal for feeding a crowd or enjoying on-the-go.
Ingredients:
1 pound breakfast sausage
6 large eggs
1/2 cup milk
1 cup shredded cheddar cheese
6 large flour tortillas or crescent roll dough sheets
Salt and pepper, to taste
Optional: chopped green onions or parsley for garnish
Directions:
In a skillet over medium heat, cook the sausage until browned and fully cooked. Drain excess fat and set aside.
In a bowl, whisk together eggs, milk, salt, and pepper. Pour into a greased pan and scramble until cooked through.
Warm the tortillas or prepare crescent roll dough as per package instructions.
Lay each tortilla or dough sheet flat. Evenly distribute cooked sausage, scrambled eggs, and shredded cheddar cheese onto each.
Roll up tightly, folding in the sides as you go to secure the filling.
Place roll-ups seam side down on a baking sheet lined with parchment paper.
Bake at 375°F (190°C) for 12-15 minutes, or until golden and cheese is melted.
Remove from oven, garnish with chopped green onions or parsley if desired, and serve warm.
