Ingredients:
2 pounds ground beef (80/20 lean-to-fat ratio)
1 cup breadcrumbs
1/2 cup milk
1/2 cup finely chopped onion
2 cloves garlic, minced
2 large eggs
1/4 cup ketchup
2 tablespoons Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
Glaze:
1/2 cup ketchup
2 tablespoons brown sugar
1 tablespoon Dijon mustard
Directions:
Preheat your oven to 350°F (175°C).
In a large bowl, combine the breadcrumbs and milk, letting them soak for a few minutes.
Add the ground beef, chopped onion, garlic, eggs, ketchup, Worcestershire sauce, salt, pepper, thyme, and oregano to the breadcrumb mixture. Mix gently until just combined; avoid overmixing to keep the meatloaf tender.
Transfer the mixture to a loaf pan or shape into a loaf on a lined baking sheet.
In a small bowl, whisk together the glaze ingredients: ketchup, brown sugar, and Dijon mustard. Spread the glaze evenly over the top of the meatloaf.
Bake for 1 hour, or until the internal temperature reaches 160°F (71°C).
Let the meatloaf rest for 10 minutes before slicing to retain its juices. Serve warm.
