Ingredients:
4 boneless, skinless chicken breasts
1 cup breadcrumbs (preferably panko)
1/2 cup grated parmesan cheese
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried basil
2 large eggs, beaten
1/4 cup all-purpose flour
1/2 cup vegetable oil (for frying)
1/2 cup marinara sauce
1 cup shredded mozzarella cheese
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Directions:
Preheat the oven to 375°F (190°C).
In a shallow bowl, combine breadcrumbs, parmesan cheese, garlic powder, oregano, basil, salt, and pepper.
In a separate shallow bowl, beat the eggs. In another bowl, add flour.
Dredge each chicken breast in flour, dip it in the beaten eggs, and coat it with the breadcrumb mixture.
Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken breasts for about 3-4 minutes per side, or until golden brown and cooked through.
Transfer the fried chicken breasts to a baking sheet. Top each piece with marinara sauce and shredded mozzarella cheese.
