Loco Moco is a beloved Hawaiian comfort dish consisting of fluffy white rice topped with a savory hamburger steak, a rich brown gravy, and a fried egg. This hearty plate delivers satisfying flavors in under 40 minutes and embodies the spirit of island-style home cooking—simple yet indulgent. Created in 1949 in Hilo, Hawaii, by necessity and creativity, this dish has since become iconic across the islands and beyond. This version draws from Ono Hawaiian Recipes' classic presentation with rice, beef patty, gravy, optional mushrooms or onions, and a sunny-side‑up egg final touch .
Ingredients
For 4 servings
Hamburger patties
1½ lb ground beef (80/20 blend)
1 Tbsp Worcestershire sauce
1½ tsp seasoning salt
1 tsp garlic powder
½ tsp black pepper
Gravy
1½ cups beef stock
4 tsp shoyu (soy sauce)
1 tsp Worcestershire sauce
2 tsp ketchup
5 tsp cornstarch (for slurry)
2 Tbsp unsalted butter
Optional: ¾ cup sliced mushrooms and ½ sweet onion, thinly sliced
To serve
4 cups cooked white rice
4 eggs (fried sunny‑side up)
Chopped green onion, for garnish
Directions
Form patties: In a bowl, mix ground beef with Worcestershire, seasoning salt, garlic powder, and pepper. Shape into four even patties, slightly larger than your serving of rice as they will shrink during cooking
Cook patties: Heat a skillet over medium-high heat and sear patties about 3–5 minutes per side until browned and cooked through. Remove and set aside, retaining drippings in the pan.
Prepare gravy: In the same pan, add butter. Optional: sauté onions and mushrooms until softened (~2–3 min). In a bowl, whisk beef stock, soy sauce, Worcestershire, ketchup, and cornstarch until smooth. Pour into pan, stir, and simmer until thickened.
Fry eggs: In a separate pan, fry eggs sunny-side up so the yolk remains runny. One egg per patty.
Assemble: Divide rice onto plates. Top with a burger patty, spoon generous gravy over it, then place a fried egg on top. Garnish with green onions.
Serve immediately: Best enjoyed hot and fresh. Leftovers are less ideal after reheating—especially the egg .
