Sushi rice
2 cups short-grain sushi rice, cooked and seasoned with rice vinegar, sugar & salt

Crunch coating
1 cup panko breadcrumbs or tempura flakes, toasted until golden

3–4 sheets nori seaweed
Optional eel or oyster sauce for drizzling

Prepare rice: Cook sushi rice per package instructions. Season with rice vinegar, sugar, and salt. Spread on a tray to cool.
Make spicy mayo crab: In a bowl, combine shredded crab with mayo and sriracha until fully coated.
Toast crunch: In a dry skillet over medium heat, toast panko until golden and fragrant—or simply use store-bought tempura flakes.
Assemble roll: On a bamboo mat lined with plastic wrap, place a nori sheet shiny side down. Wet your fingers and press an even layer of sushi rice over it, leaving a 1 cm border. Flip so rice is outward. Sprinkle toasted panko covering the rice completely.
