Ingredients
12 oz (340 g) fettuccine or spaghetti
1 lb (450 g) large shrimp, peeled and deveined
4 tablespoons unsalted butter
4 cloves garlic, minced
1 tablespoon fresh lemon juice
½ cup grated Parmesan cheese
Salt and freshly ground black pepper, to taste
2 tablespoons chopped fresh parsley (optional)
Directions
Cook the pasta in a large pot of boiling salted water according to package instructions until al dente. Drain, reserving 1 cup of pasta water.
While the pasta cooks, melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the shrimp and cook until they turn pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
Add the cooked pasta to the skillet, tossing to coat in the garlic butter. If the pasta seems dry, add reserved pasta water a little at a time until desired consistency is reached.
Return the shrimp to the skillet, add lemon juice, and toss everything together.
Sprinkle with grated Parmesan cheese and chopped parsley, if using. Season with salt and pepper to taste. Serve immediately.
