Date and Almond Cake is a moist and flavorful dessert that combines the natural sweetness of dates with the nutty richness of almonds. Ingredients:
1 cup pitted dates, chopped
1 cup boiling water
1 teaspoon baking soda
1 1/2 cups almond flour
1/2 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon salt
Sliced almonds, for topping
Directions:
Preheat oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
In a bowl, combine chopped dates, boiling water, and baking soda. Let soak for 10 minutes.
In a separate bowl, cream softened butter and sugar until light and fluffy.
Beat in eggs one at a time, then add vanilla extract.
Gradually add almond flour, all-purpose flour, and salt to the butter mixture. Mix until just combined.
Stir in soaked dates along with the soaking liquid.
Pour batter into the prepared pan and smooth the top. Sprinkle sliced almonds evenly over the batter.
Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Allow cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
