This Hawaiian-inspired banana bread is a tropical delight, blending the sweetness of ripe bananas with the juicy tang of crushed pineapple, the rich flavor of macadamia nuts, and the chewy texture of coconut flakes. Dry Ingredients:
1½ cups all-purpose white flour
½ cup sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
Wet Ingredients:
2 large eggs
1 teaspoon vanilla extract
1¼ cups ripe bananas, mashed
1 (8-ounce) can crushed pineapple with juice
½ cup + 1 tablespoon organic sunflower oil (or any tasteless oil)
Add-ins:
½ cup macadamia nuts, dry roasted and chopped
½ cup unsweetened coconut flakes
Directions:
Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease an 8.5-inch loaf pan (9-inch or 10-inch pans work too).
Roast and Chop Nuts: Dry roast the macadamia nuts in a skillet over medium heat for a few minutes until slightly browned. Once cooled, chop them up and set aside.
Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, baking soda, and salt. Mix well and set aside.
Mix Wet Ingredients: In another large bowl, whisk together the eggs, vanilla extract, mashed bananas, crushed pineapple with juice, and oil until well combined.
Combine Wet and Dry Mixtures: Add the dry ingredients to the wet ingredients and mix until just combined. Be careful not to overmix to ensure a tender loaf.
Add Nuts and Coconut: Gently fold in the chopped macadamia nuts and unsweetened coconut flakes into the batter.
Bake: Pour the batter into the prepared loaf pan. Bake for 55–65 minutes, or until a clean knife inserted into the center comes out without batter sticking.
Cool: Allow the banana bread to cool completely in the pan before slicing.
