Ingredients
2 cups heavy cream
½ cup whole milk
¼ cup granulated sugar
1½ teaspoons instant espresso powder
1 teaspoon vanilla extract
1 packet (2¼ teaspoons) unflavored gelatin
3 tablespoons water
Optional: whipped cream and chocolate shavings for garnish
Directions
Bloom the Gelatin: In a small bowl, sprinkle the gelatin over the water and let it sit for 5 minutes until it becomes soft and slightly thickened.
Heat the Cream Mixture: In a saucepan, combine the heavy cream, whole milk, granulated sugar, and instant espresso powder. Warm the mixture over medium heat, stirring occasionally, until the sugar dissolves and the coffee is fully incorporated. Do not allow it to boil.
Add Gelatin and Vanilla: Remove the saucepan from heat. Whisk in the bloomed gelatin until completely dissolved. Stir in the vanilla extract.
Strain and Pour: Optionally, strain the mixture through a fine sieve to ensure smoothness. Pour the mixture into serving ramekins or glasses.
Chill: Cover the containers with plastic wrap and refrigerate for at least 4 hours, or overnight, until the panna cotta is set.
Serve: To unmold, dip the bottom of each ramekin in warm water for a few seconds, then invert onto a plate. Garnish with whipped cream and chocolate shavings if desired.
