Ingredients:
1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons vegetable oil
1/2 cup sweet chili sauce
2 tablespoons soy sauce
1 tablespoon rice vinegar
2 cloves garlic, minced
1 teaspoon grated ginger
1 teaspoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
Chopped green onions and sesame seeds, for garnish
Directions:
In a bowl, mix flour, salt, and pepper. Dredge chicken pieces in the flour mixture until evenly coated.
Heat vegetable oil in a large skillet over medium-high heat. Fry chicken pieces in batches until golden brown and cooked through, about 5-7 minutes. Remove and drain on paper towels.
In the same skillet, combine sweet chili sauce, soy sauce, rice vinegar, garlic, and ginger. Cook for 2-3 minutes, stirring frequently.
If desired, add the cornstarch slurry to the sauce and cook until thickened.
Return chicken to the skillet and toss to coat evenly with the sauce.
