Crumble / Crust (makes bottom & topping)
1 cup (≈120 g) all‑purpose flour
½ cup rolled oats
½ cup light brown sugar, packed
¼ tsp baking soda
¼ tsp salt
½ cup (115 g) unsalted butter, melted
Peach Filling
2 cups fresh or canned peaches, chopped
2 Tbsp granulated sugar
1 Tbsp cornstarch
½ tsp ground cinnamon
1 tsp lemon juice
Prep & preheat
Preheat the oven to 350 °F (175 °C). Line an 8×8″ pan with parchment paper, allowing an overhang for easy removal .
Make the crumble base
In a medium bowl, combine flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until mixture is crumbly. Press 2/3 of the mixture firmly into the bottom of the pan to form the crust
Prepare the peach filling
Toss peaches with sugar, cornstarch, cinnamon, and lemon juice until evenly coated Spread over the crust.
Top & bake
Sprinkle remaining crumble mixture evenly over the peach layer. Bake for 35–40 minutes, or until the top is golden and the filling is bubbling around the edges
Cool & serve
Let cool completely in the pan before lifting out using the parchment overhang. Slice into squares and enjoy!
