For the Bars:
2½ cups all-purpose flour
1 cup granulated sugar
1 teaspoon salt
1 cup unsalted butter, softened
1 large egg
1 teaspoon vanilla extract
For the Cinnamon Filling:
½ cup unsalted butter, softened
1 cup packed brown sugar
2 tablespoons ground cinnamon
2 tablespoons all-purpose flour
For the Cream Cheese Frosting:
8 oz cream cheese, softened
¼ cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
Pinch of salt
1–2 tablespoons milk or cream, if needed for consistency
Prepare the Base:
Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal.
In a large bowl, whisk together the flour, sugar, and salt.
Add the softened butter, egg, and vanilla extract. Mix until a soft dough forms.
Press about two-thirds of the dough evenly into the bottom of the prepared pan. Refrigerate the pan while you prepare the cinnamon filling.
Prepare the Cinnamon Filling:
In a medium bowl, mix together the softened butter, brown sugar, cinnamon, and flour until well combined.
Remove the pan from the refrigerator and spread the cinnamon filling evenly over the dough base.
Add the Top Layer:
Crumble the remaining dough over the cinnamon filling.
Bake for 25–30 minutes, or until the top is golden brown and the edges are slightly darker. The center might still seem a bit soft, but it will set as it cools.
Allow the bars to cool completely in the pan before frosting.
Prepare the Cream Cheese Frosting:
In a large bowl, beat the cream cheese and butter together until smooth and fluffy, about 2 minutes.
Add the powdered sugar, vanilla extract, and salt. Beat on low speed until the sugar is incorporated, then increase to medium-high and beat until light and fluffy.
If the frosting seems too thick, add milk or cream, one tablespoon at a time, until you reach your desired consistency.
Finish the Bars:
Spread the frosting over the cooled bars.
Cut into squares and serve.
