Ingredients
Black Bean Patties (makes about 9 patties)
2 × 15 oz cans black beans, drained & rinsed
1 medium sweet potato (~350 g), cut into ½″ cubes
¾ cup old‑fashioned rolled oats
½ medium yellow onion, diced
½ medium red bell pepper, diced
4 cloves garlic, minced
2 tsp smoked paprika
½ tsp ground coriander
½ tsp fennel seeds
¼ tsp ground cumin
½ vegan “beef” bouillon cube (or ½ tsp vegetable bouillon paste)
1 Tbsp tamari
Kosher salt, to taste
Oil spray
Lime Drench
2 Tbsp avocado oil
Juice of 1 small lime
1–2 Tbsp agave syrup
Pinch of salt
Directions
Preheat oven to 425°F (220 °C). Line two baking sheets with parchment.
Spread drained black beans in one tray. On the second tray, put sweet potato on one side; onion, bell pepper, and garlic on the other. Drizzle with oil and a pinch of salt, toss to coat.
Bake beans on the top rack for 15 min; bake veggies on bottom for 15–20 min until sweet potato is fork-tender. Cool for 10 min.
Transfer beans, veggies, oats, spices, bouillon, and tamari to a food processor. Pulse until mixture holds together, scraping sides as needed.
Scoop ⅓-cup portions, shape into patties (~½″ thick). Arrange on a lined sheet, spray lightly with oil.
Bake for 15 min. Meanwhile, whisk together lime drench ingredients.
Brush patties with drench, flip, brush other side. Return to oven 5–10 min until golden on both sides.
Cool patties 10 min to firm up, brush with extra drench before serving.
