Ingredients:
4 bone-in, skin-on chicken thighs
Salt and pepper, to taste
1 lemon, thinly sliced
4 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon paprika
1/4 cup chicken broth
2 tablespoons olive oil
Fresh parsley, chopped (for garnish)
Directions:
Season the chicken thighs generously with salt, pepper, paprika, oregano, and thyme.
In a skillet, heat olive oil over medium-high heat. Sear the chicken thighs, skin side down, until golden brown, about 5 minutes. Flip and cook for another 3 minutes. Remove from heat.
Place minced garlic and lemon slices at the bottom of the slow cooker.
Add the seared chicken thighs on top of the lemon and garlic. Pour chicken broth around the chicken.
Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is cooked through and tender.
Garnish with fresh parsley before serving.
