With a preparation time of just 5 minutes and a cooking time of 8 minutes, it's perfect for busy weeknights. The salmon fillets are marinated in a blend of white miso paste, sugar, mirin, soy sauce, sesame oil, and ginger paste, then broiled to tender perfection. Serve it over white rice and accompany with blistered vegetables for a complete meal that brings a taste of Japanese cuisine to your table.
Ingredients:
¼ cup (60g) white miso paste
¼ cup (50g) granulated sugar (or maple syrup/honey as alternatives)
¼ cup (60ml) mirin
2 tbsp (35ml) low-sodium soy sauce or tamari (for gluten-free option)
1 tbsp (15ml) sesame oil
2 tsp ginger paste or freshly chopped ginger
4 (6 oz) salmon fillets (skin on or off)
Optional garnishes: thinly sliced scallions, black and white sesame seeds, and fresh cilantro
Directions:
Prepare the Marinade: In a medium bowl, whisk together the white miso paste, granulated sugar, mirin, soy sauce, sesame oil, and ginger paste until well combined.
Marinate the Salmon: Place the salmon fillets in a large resealable bag or a container. Reserve 2 tablespoons of the marinade for later use. Pour the remaining marinade over the salmon, ensuring all pieces are coated. Seal the bag or cover the container and refrigerate for 30 minutes.
Broil the Salmon: Preheat your broiler to high. Line a baking sheet with parchment paper or aluminum foil and lightly coat with nonstick spray. Place the marinated salmon fillets skin-side down on the prepared baking sheet, allowing any excess marinade to drip off. Broil the salmon for 6–8 minutes, rotating the pan halfway through, until the internal temperature reaches 120°F (49°C) and the fish flakes easily with a fork.
Serve: Brush the cooked salmon with the reserved marinade. Serve immediately, garnished with thinly sliced scallions, sesame seeds, and fresh cilantro.
