Ingredients:
2 pounds pork shoulder or pork butt, cut into chunks
1 can (20 ounces) pineapple chunks in juice (no sugar added)
1 small onion, chopped
3 cloves garlic, minced
1/4 cup low-sodium soy sauce
2 tablespoons apple cider vinegar
1 tablespoon honey or maple syrup
1 teaspoon ground ginger
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes (optional)
Directions:
Place pork chunks, pineapple (with juice), chopped onion, and minced garlic into the slow cooker.
In a small bowl, whisk together soy sauce, apple cider vinegar, honey, ground ginger, black pepper, and red pepper flakes if using.
Pour the sauce over the pork and pineapple mixture. Stir gently to combine.
