For the Salmon:
2 salmon fillets
½ tsp salt
½ tsp black pepper
½ tsp garlic powder
½ tsp seasoning salt or all-purpose seasoning
For the Brown Stew Sauce:
¼ cup red bell pepper, chopped or sliced
¼ cup green (or yellow/orange) bell pepper, chopped or sliced
½ medium onion, chopped
2 cloves garlic, minced
2 sprigs fresh thyme
¼ scotch bonnet pepper, finely chopped (adjust to heat preference)
½ small tomato, chopped
¼ cup chicken broth (or vegetable broth or water)
1 tbsp hoisin sauce (or 1 tsp browning sauce + 1 tsp brown sugar)
1 tbsp soy sauce
2 tsp brown sugar
Cooking oil for frying (about 1 cup neutral oil)
Season Salmon: Rinse the salmon fillets with lemon juice and water, pat dry. Season both sides with salt, black pepper, garlic powder, and seasoning salt.
Pan-Fry Salmon: In a large non-stick skillet, heat oil over medium-high heat. Fry the salmon for 5–7 minutes per side until golden brown and crispy. Remove from the skillet and set aside.
Prepare Sauce: Discard excess oil, leaving about 2 tbsp in the skillet. Reduce heat to medium, then sauté onions, garlic, bell peppers, tomato, thyme, and scotch bonnet pepper until softened.
