Slow Cooker Beef and Broccoli
Slow Cooker Beef and Broccoli is a comforting and easy-to-make takeout favorite right at home. Tender beef simmers slowly in a savory soy-based sauce until perfectly tender, then is combined with crisp-tender broccoli for a balanced, flavorful meal. This dish is perfect served over steamed rice for a satisfying weeknight dinner with minimal effort.
Ingredients:
2 pounds beef chuck roast, thinly sliced
1 cup beef broth
1/2 cup low-sodium soy sauce
1/4 cup brown sugar
3 cloves garlic, minced
1 tablespoon grated fresh ginger
2 teaspoons sesame oil
1/4 teaspoon crushed red pepper flakes (optional)
4 cups broccoli florets
2 tablespoons cornstarch
2 tablespoons water
Cooked rice, for serving
Sesame seeds and sliced green onions, for garnish
Directions:
Place thinly sliced beef into the slow cooker.
In a bowl, whisk together beef broth, soy sauce, brown sugar, garlic, ginger, sesame oil, and red pepper flakes. Pour over beef.
Cover and cook on low for 6-7 hours or on high for 3-4 hours until beef is tender.
About 30 minutes before serving, steam or blanch broccoli until crisp-tender and add to the slow cooker.
In a small bowl, whisk cornstarch and water to make a slurry. Stir slurry into the slow cooker to thicken the sauce.
Cover and cook on high for another 20-30 minutes until sauce is thickened.
Serve beef and broccoli over cooked rice, garnished with sesame seeds and green onions.
