3 ripe bananas
1/3 cup natural peanut butter
1/2 cup dark chocolate chips
2 teaspoons coconut oil
Peel and slice bananas into approximately 1/4-inch thick rounds.
Line two platters or baking sheets with parchment paper. Spread about 1/2 teaspoon of peanut butter on a banana slice, then top with another slice to make a mini sandwich. Repeat to make about 30 bites. Place on the prepared platters and freeze for about 1 hour.
Once frozen, melt the chocolate chips with coconut oil in a microwave-safe bowl: microwave for 1 minute, stir, then microwave in 30-second increments until smooth (total melting time under 2 minutes).
