Ingredients
• 4 salmon fillets (5–6 ounces each), skin-on or skinless
• 1 Boursin cheese round (5.2 oz), garlic & fine herbs flavor
• 2 Tbsp olive oil or melted butter
• 2 cloves garlic, minced
• 1 Tbsp lemon juice
• 1 tsp lemon zest
• ½ tsp salt (adjust to taste)
• ¼ tsp black pepper
• 2 Tbsp chopped fresh parsley (optional garnish)
• Lemon wedges, for serving
Preheat oven to 400 °F (200 °C). Lightly grease a baking dish or line with parchment paper. In a small bowl, stir together Boursin cheese, garlic, lemon zest, lemon juice, and half of the olive oil or melted butter until smooth. Pat the salmon dry, then drizzle with remaining oil, and season with salt and pepper. Place fillets in the dish and spoon the cheese mixture evenly across each piece. Bake for 15–20 minutes, until salmon flakes easily with a fork or reaches an internal temperature of 145 °F (63 °C). Remove from oven, rest for 2 minutes, garnish with parsley, and serve with lemon wedges.
