1 whole chicken (about 4–5 pounds)
2 tablespoons olive oil
1 tablespoon garlic, minced
1 tablespoon fresh thyme, chopped
1 tablespoon fresh rosemary, chopped
Zest and juice of 2 large oranges
1 tablespoon honey
1 tablespoon soy sauce
1 teaspoon Dijon mustard
Salt and pepper to taste
1 small onion, quartered
1 cup chicken broth
2 tablespoons butter (optional)
Preheat the oven to 375°F (190°C).
In a small bowl, whisk together olive oil, minced garlic, chopped thyme, chopped rosemary, orange zest, orange juice, honey, soy sauce, Dijon mustard, salt, and pepper.
Place the whole chicken in a roasting pan.
Rub the orange mixture all over the chicken, making sure to coat it evenly.
Stuff the quartered onion into the cavity of the chicken.
Pour the chicken broth into the bottom of the roasting pan.
Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
Baste the chicken with the pan juices every 30 minutes to keep it moist.
Optional: During the last 15 minutes of roasting, add butter to the pan to enhance the flavor and create a richer sauce.
Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving.
