Ingredients
2 cups chocolate cookie crumbs
½ cup unsalted butter, melted
24 oz cream cheese, softened
1 cup granulated sugar
2 tsp vanilla extract
1 cup heavy cream
12 oz semisweet chocolate, melted and cooled
¼ cup powdered sugar
¼ cup cocoa powder
¼ tsp salt
Directions
Prepare crust
Preheat oven to 350°F (180°C). Grease a 9-inch springform pan.
Mix chocolate cookie crumbs and melted butter, then press into pan’s bottom. Bake for 10 minutes. Let cool.
Make mousse filling
Beat softened cream cheese until smooth. Add granulated sugar and vanilla; continue beating until creamy.
Whip heavy cream in a separate bowl until stiff peaks form.
Fold melted (and cooled) semisweet chocolate into cream cheese mixture. Then gently fold in whipped cream until fully blended—no white streaks remaining.
Assemble & chill
Pour mousse over the cooled crust, smoothing the top.
Refrigerate for at least 4 hours (or overnight) to set.
Finish & serve
Release the springform sides carefully.
Sift together powdered sugar, cocoa powder, and salt; dust the top of the cake.
