Cattle Drive Casserole is a hearty, rustic dish inspired by cowboy cooking—perfect for feeding a crowd with minimal effort. This comforting one-pan meal layers savory ground beef, tender potatoes, and veggies in a creamy sauce, topped with cheese and crispy onions or breadcrumbs. It combines protein, starch, and flavor in a single bake, making cleanup easy and prep flexible. With Tex‑Mex flair—taco seasoning, green chiles, and cheddar cheese—it brings warmth and satisfaction to family dinners or potlucks. Plus, it’s easy to customize with extra veggies or protein swaps for dietary variation.
1.5 lb ground beef (or swap with turkey/plant-based meat)
1 red bell pepper, chopped
1 yellow onion, chopped
1 oz taco seasoning
~2½ cups biscuit mix (Bisquick-style)
~1 cup water (for biscuit base)
½ cup mayonnaise + ½ cup sour cream
4 oz (1 can) diced green chiles, drained
1 tsp garlic powder
1½ cups shredded cheddar cheese (reserve half for topping)
Preheat & prep base: Preheat oven to 350 °F. Mix biscuit mix with water, press into a greased 9×13 dish, and bake ~5–15 min until lightly golden.
Cook beef & veggies: While baking, sauté ground beef, onion, and bell pepper until beef is fully browned. Stir in taco seasoning; remove from heat.
Mix creamy layer: Blend sour cream, mayo, drained green chiles, garlic powder, and half the cheese until smooth.
Layer casserole: Spread beef mixture over baked biscuit base. Dollop creamy cheese layer over the beef. Sprinkle remaining cheddar on top.
Bake & rest: Bake uncovered for ~30 min until bubbly and golden. Let rest ~5 min before slicing and serving.
