1 cup unfed sourdough starter (from the fridge)
1¼ cups all-purpose flour
1 egg
¼ cup granulated sugar
½ tsp ground cinnamon
½ tsp [duplicate, assumed same] ground cinnamon
1/8 tsp ground nutmeg
¼ tsp ground ginger
1½ tsp baking powder
½ tsp salt
3 tbsp unsalted butter
¼ cup oat milk
¼ cup water
2 large Honeycrisp apples
3 cups canola oil (for frying)
¼ cup powdered sugar (for dusting)
Prepare the batter: In a mixing bowl, combine the sourdough discard, egg, granulated sugar, oat milk, and water. Then whisk in flour, baking powder, cinnamon, nutmeg, ginger, and salt until just combined. Fold in finely chopped Honeycrisp apples.
Fry the fritters: Heat canola oil in a deep skillet or pot over medium heat until it reaches around 350–375 °F. Drop spoonfuls of batter into the hot oil, frying batches until golden and crispy (about 2–3 minutes per side). Ensure not to overcrowd the pan.
Drain and serve: Remove fritters with a slotted spoon and drain on paper towels. Dust lightly with powdered sugar before serving warm.
