Nobu-Style Miso Salmon is a delectable dish that marries the rich, umami flavors of miso with the tender, flaky texture of salmon. Inspired by the iconic miso-marinated black cod from Nobu, this recipe offers a simplified approach without compromising on taste. The salmon is marinated in a savory-sweet miso glaze, then broiled to perfection, resulting in a beautifully caramelized exterior and moist interior. Perfect for a weeknight dinner or a special occasion, this dish brings restaurant-quality flavors to your home kitchen.
6 pieces of salmon fillet (5–6 oz each, skin on)
2 tbsp miso paste
2 tbsp brown sugar
2 tbsp tamari (or soy sauce)
1/4 cup rice wine vinegar
2 tsp sesame oil
Garnish:
Sesame seeds
Chopped green onions
Prepare the Marinade:
In a bowl, whisk together miso paste, brown sugar, tamari, rice wine vinegar, and sesame oil until the mixture is smooth and the sugar has dissolved.
Marinate the Salmon:
Place the salmon fillets in a shallow dish or resealable plastic bag.
Pour the marinade over the salmon, ensuring each piece is well-coated.
Cover and refrigerate for at least 1 hour, preferably overnight, to allow the flavors to meld.
Broil the Salmon:
Preheat your broiler to high heat.
Lightly oil a baking tray or line it with parchment paper.
Place the marinated salmon fillets on the tray, skin-side down.
Broil for 6–8 minutes, or until the salmon is cooked through and the surface is slightly charred. Keep a close eye to prevent burning.
Garnish and Serve:
Remove the salmon from the broiler.
Brush with a bit of the reserved marinade for added flavor.
Sprinkle with sesame seeds and chopped green onions.
Serve immediately, ideally with steamed rice and sautéed vegetables.
