Ingredients:
2 pounds pork shoulder or pork loin, trimmed
1 can (20 ounces) pineapple chunks, with juice
1/2 cup soy sauce
1/4 cup brown sugar
1/4 cup apple cider vinegar
2 cloves garlic, minced
1 tablespoon ginger, grated
1/2 teaspoon red pepper flakes (optional, for a little heat)
1/4 teaspoon ground black pepper
1 tablespoon cornstarch (for thickening the sauce)
2 tablespoons cold water
Directions:
Prepare the Pork:
 Trim any excess fat from the pork and cut it into large chunks if desired (or leave it whole for slower cooking).
Make the Sauce:
 In a bowl, combine the pineapple chunks with juice, soy sauce, brown sugar, apple cider vinegar, garlic, ginger, red pepper flakes (if using), and black pepper. Stir until the sugar is dissolved.
Cook the Pork:
 Place the pork in the slow cooker and pour the pineapple sauce over the meat. Cover and cook on low for 6-8 hours, or until the pork is tender and easily shreds with a fork.
Thicken the Sauce:
 Once the pork is cooked, remove it from the slow cooker and shred it using two forks.
 To thicken the sauce, mix the cornstarch with cold water to make a slurry. Stir the slurry into the sauce in the slow cooker and cook on high for 15-20 minutes, or until the sauce has thickened.
Serve:
 Return the shredded pork to the thickened sauce and stir to coat. Serve over rice or alongside your favorite vegetables.
