For the Salisbury Steaks
½ onion, grated
½ cup panko breadcrumbs (or ⅓ cup regular)
1 lb (500 g) ground beef
1 garlic clove, minced
1 egg
2 Tbsp ketchup
1 beef bouillon cube, crumbled
½ tsp Worcestershire sauce
3 tsp Dijon mustard (or 2 tsp dry mustard)
For the Mushroom Gravy
1 Tbsp olive oil
½ onion, finely chopped
2 garlic cloves, minced
5 oz (150 g) mushrooms, sliced
2 Tbsp unsalted butter
3 Tbsp plain flour
2 cups beef stock (low‑sodium)
1 cup water
2 tsp Dijon mustard
2 tsp Worcestershire sauce
Prep onion + breadcrumbs
Grate ½ the onion into the breadcrumbs; let them soak for a few minutes to soften.
Form patties
In a bowl, combine soaked breadcrumbs, beef, garlic, egg, ketchup, bouillon, Worcestershire, and mustard. Mix lightly until just combined. Divide into 5 oval patties, about ¾″ thick.
Brown patties
Heat olive oil in a hot skillet. Sear patties 1 min per side until browned but still raw inside. Remove to a plate.
Cook mushrooms & aromatics
Lower heat to medium. Add chopped onion and garlic; cook 2 min until translucent. Add mushrooms and cook ~2 min until golden.
Make gravy
Stir in butter. Once melted, sprinkle flour and cook 30 sec. Gradually whisk in stock, water, mustard, and Worcestershire until smooth.
Finish patties
Nestle steaks back into skillet with any juices. Simmer 5–7 min until gravy thickens and patties are fully cooked, turning occasionally. Season to taste.
Serve
Transfer steaks to plates, spoon over mushroom gravy. Ideal atop mashed potatoes, egg noodles, or rice—garnish with fresh parsley if desired.
