Ingredients:
1 pound ground beef
1 medium onion, diced
2 cloves garlic, minced
1 tablespoon taco seasoning
2 cups red enchilada sauce
8 corn tortillas
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 teaspoon chili powder
½ teaspoon ground cumin
Salt and pepper to taste
Optional toppings: sour cream, chopped cilantro, diced tomatoes
Directions:
Preheat Oven: Set your oven to 350°F (175°C).
Cook Beef Mixture: In a large skillet over medium heat, cook the ground beef, diced onion, and minced garlic until the beef is browned and the onion is translucent. Drain any excess fat.
Season Beef: Stir in the taco seasoning, chili powder, ground cumin, salt, and pepper. Mix well to combine.
Prepare Tortillas: Lightly warm the corn tortillas in a dry skillet or microwave to make them more pliable.
Assemble Enchiladas: Spread a small amount of enchilada sauce on the bottom of a baking dish. Place a tortilla on a flat surface, spoon about ⅓ cup of the beef mixture down the center, sprinkle with a little of each cheese, and roll up the tortilla. Place the rolled tortilla seam-side down in the baking dish. Repeat with the remaining tortillas and beef mixture.
Top Enchiladas: Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining shredded cheeses.
Bake: Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 5–10 minutes, or until the cheese is melted and bubbly.
Serve: Remove from oven and let cool for a few minutes. Top with optional toppings such as sour cream, chopped cilantro, or diced tomatoes before serving.
