1 ½ pounds pork belly, patted dry and cut into 1-inch pieces
3 tablespoons canola oil
1 teaspoon kosher salt
1 teaspoon black pepper
¼ cup (79 g) pure maple syrup
4 teaspoons Dijon mustard
1 ½ teaspoons apple cider vinegar
