2 boxes puff pastry sheets (thawed)
16 oz breakfast sausage
8 large eggs
½ tsp garlic salt
½ tsp black pepper
3 cups shredded sharp cheddar cheese
Preheat oven to 400 °F (≈ 200 °C) and line baking sheets with parchment paper.
In a frying pan, cook breakfast sausage until browned. Drain on paper towels, then transfer to a large bowl.
Whisk eggs with garlic salt and pepper; scramble in the same pan until just set. Mix the eggs with the sausage in the bowl.
Lightly roll out each puff pastry sheet on a floured surface and cut into nine equal squares.
Arrange nine squares on baking sheets, add shredded cheese, followed by a spoonful of sausage‑egg mixture, and more cheese.
Top with remaining pastry squares and crimp the edges with a fork to seal.
Whisk the egg wash and brush over each pastry top.
Bake for 10–12 minutes, or until golden and puffed. Enjoy warm.
