Loaded Potato and Meatloaf is a comforting, hearty dish that combines the classic flavors of loaded baked potatoes with the savory goodness of meatloaf. This recipe features a moist and flavorful meatloaf base topped with creamy mashed potatoes, melted cheese, crispy bacon, and fresh green onions. Ingredients:
For the Meatloaf:
1 1/2 pounds ground beef
1 cup breadcrumbs
1/2 cup milk
1/2 cup onion, finely chopped
2 cloves garlic, minced
1 large egg
1/4 cup ketchup
1 tablespoon Worcestershire sauce
Salt and pepper, to taste
For the Topping:
2 cups mashed potatoes (prepared)
1 cup shredded cheddar cheese
4 slices cooked bacon, crumbled
2 green onions, sliced
Directions:
Preheat oven to 350°F (175°C).
In a large bowl, combine ground beef, breadcrumbs, milk, onion, garlic, egg, ketchup, Worcestershire sauce, salt, and pepper. Mix until well combined.
Shape mixture into a loaf and place in a greased loaf pan.
Bake meatloaf for 50 minutes.
Remove from oven and spread mashed potatoes evenly over the top of the meatloaf.
Sprinkle shredded cheddar cheese and crumbled bacon on top of the mashed potatoes.
Return to the oven and bake for an additional 15 minutes, or until cheese is melted and bubbly.
Garnish with sliced green onions before serving.
