Ingredients:
3 cups whole milk
2 (3.4 oz) packages instant banana pudding mix
16 oz (2 tubs) whipped topping (e.g., Cool Whip), thawed
1 box (14.4 oz) graham crackers
3–4 ripe bananas
Directions:
Prepare the Pudding:
In a large bowl, whisk together the whole milk and banana pudding mix until the mixture thickens, about 1–2 minutes.
Gently fold in 8 oz of the whipped topping until well combined.
Assemble the Cake:
In a 9×13-inch baking dish, arrange a layer of whole graham crackers to cover the bottom. You may need to break some crackers to fit.
Slice the ripe bananas and place a layer over the graham crackers.
Spread ⅓ of the banana pudding mixture over the bananas.
Repeat the layers twice: graham crackers, bananas, and pudding mixture.
Finish with a final layer of graham crackers.
Spread the remaining whipped topping over the top layer of graham crackers, smoothing it to the edges.
Chill:
Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and the graham crackers to soften.
Serve:
Before serving, slice the cake into squares. Optionally, garnish with additional banana slices or crushed graham crackers.
