Ingredients
For the scallion cream cheese:
4 tablespoons sliced green onions (about 2 green onions)
4 tablespoons whipped cream cheese
For the bagel sandwich:
1 everything bagel, toasted
2 eggs
2 slices American cheese
2 slices bacon, cooked and broken in half
1 tablespoon hot honey (or regular honey)
Directions
In a medium bowl, combine the whipped cream cheese and sliced green onions until evenly distributed.
Heat a large non-stick skillet over medium heat and lightly spray with olive oil.
Pour in the beaten eggs and cook in a flat layer until the edges begin to set.
Place the two slices of American cheese in the center of the eggs and fold the edges over to form a square, encasing the cheese.
Transfer the egg and cheese square to the bottom half of the toasted bagel.
Top the eggs with the broken bacon slices and drizzle with hot honey.
Scoop out a small portion from the inside of the top bagel half to create a shallow well.
Spread the prepared scallion cream cheese into the well of the top bagel half.
Place the top bagel half onto the assembled sandwich to complete.
