Ingredients:
12 ounces elbow macaroni (or your favorite pasta)
1 1/2 cups dill pickles, chopped
1/2 cup red onion, finely chopped
1/2 cup celery, chopped
1/4 cup fresh dill, chopped (optional, for extra dill flavor)
1/2 cup mayonnaise
1/4 cup sour cream
1/4 cup pickle juice (from the pickle jar)
1 tablespoon Dijon mustard
1/2 teaspoon garlic powder
Salt and pepper, to taste
Directions:
Cook the Pasta:
Cook the elbow macaroni according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside to cool.
Prepare the Vegetables:
While the pasta is cooling, chop the dill pickles, red onion, celery, and fresh dill (if using).
Make the Dressing:
In a small bowl, whisk together mayonnaise, sour cream, pickle juice, Dijon mustard, garlic powder, salt, and pepper. Taste and adjust seasoning as needed.
Assemble the Salad:
In a large bowl, combine the cooled pasta with the chopped vegetables and fresh dill (if using). Pour the dressing over the pasta and vegetables, tossing everything together until evenly coated.
Chill and Serve:
Cover the salad and refrigerate for at least 1 hour before serving to allow the flavors to meld. Serve cold and enjoy!
