For the veggies:
3 Tbsp unsalted butter
1 cup onion, diced
1 cup carrots, peeled and diced
½ cup celery, diced
2 cups russet potato, peeled and diced
Seasonings & thickener:
Kosher salt and freshly ground black pepper, to taste
1½ tsp dried thyme
½ tsp red pepper flakes (adjust for heat)
3 Tbsp all-purpose flour
Broth & dairy:
3 cups seafood stock (or vegetable/chicken broth as substitute)
2 cups half-and-half (or heavy cream for extra richness)
Seafood:
½ lb salmon, chunked
½ lb white fish (e.g., sea bass, cod, halibut, tilapia), chunked
½ lb shrimp, peeled, deveined, and chopped

Chopped cilantro or green onions
