Easy Slow Cooker Chicken Broth
This hearty chicken soup is a one-pot wonder, combining tender chicken, vegetables, and flavorful seasonings. Set it and forget it—let your slow cooker do the work while you enjoy the delicious aroma filling your home.
1 lb (450g) boneless, skinless chicken breasts
1 medium onion, chopped
3 medium carrots, peeled and sliced
2 celery stalks, chopped
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried parsley
6 cups (1.4L) low-sodium chicken broth
Salt and pepper, to taste
Optional: 1 cup egg noodles or rice
Prepare Ingredients: Place the chicken breasts, chopped onion, sliced carrots, chopped celery, minced garlic, dried thyme, and dried parsley into the crockpot.
Add Broth: Pour the chicken broth over the ingredients in the crockpot. Season with salt and pepper to taste.
Cook: Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is tender and easily shreds.
Shred Chicken: Remove the chicken breasts from the crockpot and shred them using two forks. Return the shredded chicken to the soup.
Optional Add-ins: If adding egg noodles or rice, stir them into the soup and cook on high for an additional 30 minutes, or until the noodles or rice are tender.
Serve: Taste and adjust seasoning with additional salt and pepper if needed. Ladle the soup into bowls and serve hot.
