Ingredients
8 slices bacon, cut into ½-inch pieces
⅓ cup finely chopped sweet onion
1 cup all-purpose flour
2 tablespoons chopped fresh chives
1 teaspoon baking powder
½ teaspoon salt
⅛ teaspoon cayenne pepper
⅔ cup milk
1 large egg, beaten
1 tablespoon canola or vegetable oil
1 cup frozen, canned, or fresh corn
½ cup shredded Monterey Jack cheese
Warm maple syrup, for serving
Directions
In a medium skillet, cook the bacon pieces over medium heat until they begin to brown.
Add the chopped onion to the skillet and continue to cook until the bacon is crisp and the onion is softened.
Remove a heaping tablespoon of the bacon and onion mixture and set it aside for topping the griddle cakes.
In a medium bowl, whisk together the flour, chives, baking powder, salt, and cayenne pepper.
Stir in the milk, beaten egg, and oil until just moistened.
Fold in the reserved bacon and onion mixture, corn, and shredded Monterey Jack cheese. The batter will be thick.
Heat a griddle or large skillet over medium heat and lightly grease it with oil.
Pour a heaping ¼ cup of the batter onto the griddle for each griddle cake.
Cook until the bottom is golden brown, about 3 to 4 minutes.
Flip the griddle cake and cook for an additional 2 to 3 minutes on the other side.
Remove from the griddle and keep warm.
Repeat with the remaining batter.
Serve the griddle cakes stacked, topped with the reserved bacon and onion mixture, and a generous drizzle of warm maple syrup.
