12 oz rotini pasta (or preferred short pasta)
2 cups cooked chicken breast, chopped or shredded
8 slices bacon, cooked and crumbled
1 cup sharp cheddar cheese, shredded or cubed
1½ cups cherry tomatoes, halved
1 cup cucumber, diced (optional)
¼ cup red onion, finely chopped
¾ to 1 cup ranch dressing (adjust to your liking)
Salt and pepper, to taste
Fresh parsley or chives for garnish (optional)
Cook the pasta: Boil pasta according to package directions. Drain and rinse under cold water to stop cooking. Set aside to cool.
Prepare the ingredients: While pasta cooks, cook the bacon until crispy. Drain on paper towels, then crumble. Chop or shred cooked chicken, slice tomatoes, dice cucumber and onion.
Mix everything together: In a large mixing bowl, combine the cooled pasta, chicken, bacon, cheese, tomatoes, cucumber, and onion.
