½ cup red seedless grapes (from California)
4 slices uncured bacon
4 oz Pepper Jack cheese, cut into small cubes
Rinse the grapes under running water and gently pat them dry.
Slice each bacon strip in half and cook the 8 pieces in the microwave following the package instructions. Set aside the cooked bacon.
Use 4-inch toothpicks. First, fold 2 arugula leaves and slide them onto each skewer.
Alternate threading grapes and cubes of Pepper Jack cheese onto each skewer.
