Ingredients:
1 pound breakfast sausage
6 large eggs
Salt and pepper, to taste
1 cup shredded cheddar cheese
8 large flour tortillas or crescent roll dough
1 tablespoon butter or oil (for cooking eggs)
Directions:
Preheat oven to 375°F (190°C).
In a skillet over medium heat, cook breakfast sausage until browned and cooked through. Drain excess fat and set aside.
In a bowl, whisk eggs with salt and pepper. In a non-stick pan, heat butter or oil over medium heat, scramble eggs until cooked through but still soft.
Lay out tortillas or unroll crescent dough on a clean surface.
