Ingredients:
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup unsweetened cocoa powder
2 tablespoons instant espresso powder
3 ripe bananas, mashed
3/4 cup granulated sugar
1/3 cup vegetable oil or melted butter
2 large eggs
1 teaspoon vanilla extract
1/2 cup semi-sweet chocolate chips
Directions:
Preheat oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
In a medium bowl, whisk together flour, baking soda, salt, cocoa powder, and espresso powder.
In a large bowl, combine mashed bananas, sugar, oil, eggs, and vanilla extract. Mix well.
Gradually add dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
Fold in chocolate chips gently.
Pour batter into the prepared loaf pan and smooth the top.
Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
