Chicken & Seasoning
2 lb chicken tenders (or chicken breast/thigh cut into ~3″ pieces)
2 Tbsp olive oil
2 tsp paprika
1 tsp garlic powder
1 tsp onion powder
½ tsp salt
½ tsp black pepper
Garlic Parmesan Butter Sauce
1 stick (8 Tbsp) butter
8–10 cloves garlic, minced
½ cup grated Parmesan cheese
1 Tbsp hot sauce (adjust for more heat)
2 tsp red pepper flakes
~⅓ cup fresh parsley, minced
Prep skewers: Soak wooden skewers in water for at least 30 minutes to prevent burning.
Season chicken: Cut chicken into 3″ pieces, toss with olive oil and seasoning mix until evenly coated. Thread tightly onto skewers to keep them juicy.
Make sauce: In microwave or saucepan, melt butter with garlic. Stir in hot sauce, red pepper flakes, parsley, and Parmesan until combined. If it separates, whisk in extra softened butter. Reserve about one‑third of sauce for basting during cooking, keeping the rest clean.
Air-fry method: Preheat air fryer to 400 °F. Cook 2–3 skewers at a time: first 5 min, then flip and baste, cook 2 min, flip again, baste and cook 5–6 more minutes until internal temp reaches 165 °F. Total cook time ~12–14 min. After cooking, brush with reserved sauce and sprinkle additional Parmesan.
Oven method: Preheat oven to 450 °F, bake skewers ~14 min, flipping halfway and basting a few times. Then broil 2 min to brown, final baste, and sprinkle Parmesan.
Grill method: Preheat grill to medium‑high; grill skewers ~5–6 min per side, basting during cooking, then finish with final baste and Parmesan.
